- 2 lbs. ripe tomatoes, quartered
- 2 crimson, yellow or orange peppers, seeded and quartered
- 5 tablespoons excess virgin olive oil, divided
- 3 cloves garlic

- 1 litre inventory (vegetable or hen)
- 1/2 cup approximately chopped contemporary basil, loosely packed
