Roasted Tomato and Pepper Soup (vegan)

This Roasted Tomato and Pepper Soup is packed with fibre and nutritional vitamins to retain you healthy through the winter season months and is whipped up in moments.  Roasting the vegetables brings out their normal sweetness and intensifies the flavour.  Depending on your tomatoes, you could want a pinch of sugar at the end to taste!

Elements

  • 1 massive sweet onion, quartered
  • 2 lbs. ripe tomatoes, quartered
  • 2 crimson, yellow or orange peppers, seeded and quartered
  • 5 tablespoons excess virgin olive oil, divided
  • 3 cloves garlic
  • 1/2 cup white wine (or stock)
  • 1 litre inventory (vegetable or hen)
  • 1/2 cup approximately chopped contemporary basil, loosely packed
  • salt and pepper to flavor
  • pinch of sugar to taste (optional)

Recommendations

ROAST THE Greens

  1. Preheat the oven to 400 F and line a baking sheet with parchment paper.

  2. Toss the greens with 3 tablespoons of the olive oil, season with salt and pepper, and roast for all around 45 minutes, until finally the veggies are gentle and golden brown with the tomatoes blistered.  Remove from the oven.

MAKE THE SOUP

  1. In a substantial weighty bottomed pot (I use a Staub cocotte), insert the remaining 2 tablespoons of olive oil and heat on medium-small.  Add the crushed garlic and cook, stirring, right until it is fragrant, about 1 minute (do not brown the garlic as it will get bitter).  Add the white wine stir, and insert the roasted greens (like juices) and inventory.  Cook uncovered for about 15-20 minutes, stirring once in a while.  Add the basil and stir.

  2.
